Always a Hit : Aunt Marys’ Pasta Recipe

Summer Holidays like the 4th of July are always a treasured time to enjoy with family and friends. Each year I enjoy bringing this fabulous recipe to most of our summer events. My version of 'Aunt Marys Italian Pasta Salad' is always a hit and hope it will be a crowd pleasure for you as well. Enjoy and Happy Summer Holidays to you all - Bren in the BGgarden -


Aunt Marys' Italian Pasta Salad

Always a hit in my kitchen as well because it is super easy to prepare and is loaded with super yummy fresh goodies I can find right from my garden here in Ohio. I also want to note that this is a large passing dish that can be made for under $5 !

SERVES 10 - 12

Ingredients:

  • 16 oz package of thin spaghetti noodles (prepared as directed on box).
  • 2 cucumbers, diced with peels on
  • 2 large ( 4 oz) vine ripe tomatoes
  • 1 small onion , diced
  • 1 medium
    red bell pepper, diced
  • 1/2 cup sliced black olives  
  • 12 oz of Italian salad dressing ( I use my herb Oil recipe)
  • 1/3 cup of real parmesan cheese.
  • 4 tablespoons of Salad Supreme herbs

Directions:

  1. Cook pasta and rinse in cold water until cool.
  2. Add oil and onion and let sit in the refrigerator over night.
  3. Prepare the veggies as listed in ingredients above.
  4. Add the remaining ingredients and serve immediately

NOTE: Leftovers do not keep very well.
